In 1961, 'The Bistro' opened in Hobart - Tasmania’s first independent restaurant with the use of a full licence. The charismatic Pat Collins' cellar-restaurant in Collins Street became an important social centre for a generation of artists, young professionals, journalists and left-leaning politicians, scandalising some but ultimately helping to change community attitudes, playing an important part in Tasmania's 'coming of age'.
